This morning I got an email from my girlfriend informing me that it was National Egg Day. I can’t say I’ve heard of this before, but since I like eggs and her mom had recommended this recipe, I figured I’d give it a shot for dinner. For leftover night I made paninis out of a few of the dinners Dana made this week. Dana had picked up some bakery bloomin’ onion bread which I used as the base. I used chicken and gravy from her Crockpot Whole Chicken, some roasted onions from her Roasted Potatoes, Chicken Sausage and Peppers dish and yogurt jalapeño cheese for kick.
I used this Cuisinart Panini Press to grill the panini until hot throughout and the cheese was melted. I also added some extra chicken gravy and a half sour pickle on the side.
